HISTORICAL AND TECHNICAL NOTES
The blend par excellence of the two most well-known native Salento vines, this time vinified as a rosé. The grapes are harvested in September, then cryomacerated for about 6/7 hours. Immediately after, the skins are separated from the must, which continues its vinification and refinement in steel.
A simple wine to taste, easy to pair with dishes and aperitifs, the great rediscovery of young people, especially in the long Salento summers.

VINIFICATION
The grapes are subjected to a short maceration on the skins and then fermented and vinified in steel tanks, thermo-regulated at 15°C.

ORGANOLEPTIC CHARACTERISTICS
Pale pink to the eye, sparkling. The nose is dominated by small crunchy red fruits, then delicate notes of rose, and iodine puffs in the background. Pleasantly fresh and savoury sip, balanced, typical of the Negroamaro it represents. Good persistence finish

Raw prawns and scampi; courgette and prawn risotto; couscous; omelettes; white meat dishes
