HISTORICAL AND TECHNICAL NOTES
Amaluna is the first sparkling wine made in Salento! A Charmat Method obtained from 100% Negroamaro grapes, with which we inaugurated the sparkling wine production plant. A challenge that we strongly desired, and won, strong in our trust in our typical grape variety par excellence, Negroamaro. The name Amaluna celebrates the moon, that feminine generator principle, that mother to whom we entrust ourselves, so often evoked by farmers in their dreams and expectations.
The first sparkling wine from Salento is aimed at all age groups, the finest palates and those who are approaching the world of wine for the first time, also taking on a social character. These extraordinary Negroamaro grapes are harvested at the end of August, in order to preserve their freshness, vinified in white therefore with immediate separation of the skins from the pulp, and made sparkling with the Charmat Method.

VINIFICATION
The grapes are harvested early to preserve the acidity, after an initial fermentation in steel the foaming takes place in insulated autoclaves at a controlled temperature of 14/16°C for approximately 30 days

ORGANOLEPTIC CHARACTERISTICS
A Charmat method, obtained from pure Negramaro grapes, which admirably demonstrates the versatility of this vine. Sparkling antique pink with a subtle and persistent perlage. The nose is dominated by aromas of small fresh red fruits, strawberries and raspberries, rose petals and iodine puffs. The sip is pleasant, immediate, with a perfect balance between softness and freshness. The finish on the palate is as pleasant as it is persistent.
